With Memorial day and 4th of July just around the corner, I'd like to share one of my favorite, not to mention inexpensive, recipes. Last year I was searching for fun red, white, and blue desserts. I came across many different ideas, but I took a couple of them and made it my own. I present to you, red velvet and vanilla swirl cupcakes!
What you will need:
-1 box Betty Crocker Super Moist Red Velvet cake mix
-3 eggs, 1/2c. vegetable oil, 1 1/4c. water
-1 box Betty Crocker Super Moist Vanilla cake mix
-3 eggs, 1/2c. vegetable oil, 1c. water
-blue gel food coloring
-32oz Betty Crocker Whipped Butter Cream icing (or whatever icing you'd like)
-about 40-50 cupcake liners/baking cups
If you're feeling fancy, you'll also need 1-2 icing bags with design tips (whatever design you want: it will usually show you what the design will look like on the back of the package or pamphlet if it comes with one)
this recipe makes about 3 dozen plus some, so be prepared for a lot of cupcakes.
Directions:
preheat oven to 350 F
follow the instructions for mixing the vanilla cake mix
place one scoop of mix in each liner so the liner is 1/4 way filled
follow the instructions for mixing the red velvet cake mix
place one scoop of mix on top of the vanilla to where the liner is now 1/2 filled
this part is optional: take a toothpick or butter knife and swirl the cake mixes together. It will mix in the end but if you want them to have a little more swirl to them then do this step.
bake in oven for about 14 minutes, but check on them a couple minutes before (poke at them with a toothpick or butter knife to check. If it comes out clean, they're done)
while the cupcakes are baking, mix the icing until fluffy
place a couple of blue drops in the icing and mix until they're the color to your liking.
let cupcakes cool.
place icing in bag, and create your design on the cupcakes (tip: if you're making the cupcakes for a different day, wait the day of serving to put icing on)
